La Petite Maison's Cocktail – How to Make It

WHere is a simplified interpretation of a beverage from a new drinks list. It's a batch pre-mixed that's bursting full of flavours of the Christmas time, which makes it excellent for hosting a festive gathering. Reserve the remaining citrus syrup for morning drinks, puddings, or to make additional servings of the drink.

The Bikini Cocktail

Serves 10 guests

To make the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Premix (produces 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Citrus Syrup: Place all the items in a pot, heat until it reaches a light boil, stirring to dissolve. After that, take off the heat and leave to reach room temperature fully. Pour to a clean bottle, close it and store chilled, it can be stored for around one month.

To make Cocktail Base: Pour the specified liquid ingredients into a big jug, leave to sit for one hour, then filter it , ideally through a fine cloth, so it's perfectly clear.

When ready to serve: Pour 85ml of the cocktail base into a mixing glass packed with ice, and agitate lightly for about 60 seconds to chill. Strain into a chilled martini glass or a similar vessel, top with some cranberries and finish by giving it a light spray with the mandarin essence over the drink.
